Carolyn Mimms Pennock was called home to the kingdom of Heaven on June 20th, 2025 after a lengthy battle with Parkinson's Dementia.

Carolyn was born in Stockton, California to Charlie & Lula Mimms. She was the youngest of 4 children. The family moved from Stockton to Holly Colorado when Carolyn was a young girl. The family then moved to Loveland where Carolyn attended middle school & her first two years of high school. The family again moved to Ft. Collins. Carolyn attended Fort Collins High School and graduated in 1960. After graduation she worked for Karl's Shoe Company.

Carolyn & her family attended both Meadowlark Church of Christ in Ft. Collins & Bellvue Church of Christ & that is when she met the love of her life, Verlin Pennock. Carolyn & Verlin were married on June 1st, 1962.

A couple of years after marrying Verlin she took a job at the Sears Department Store. She worked for Sears until 1971. She quit work at Sears when they adopted a baby girl, Stacy. She gave birth to their son Kevin in 1974. Carolyn was a proud mother. She encouraged & supported her children in sports & activities, she was a room mother, & a constant PTA member at Moore Elementary for numerous years.

She was a grandma & great grandma!! She treasured her grandkids, she loved playing with them, taking them on trips, spoiling them!!

She loved her dogs & cats, reading, crafting & decorating her home for every holiday. She loved Christmas, the family would head to Denver almost every year to see the decorations, lights & parade.

Carolyn loved to travel! The family enjoyed numerous trips in their motorhome in the late 70's-80's. They traveled to almost every state west of the Mississippi, the best trips were with extended family.

Carolyn loved music!! They attended many concerts. She loved early rock, country & gospel music but above all she & Verlin loved bluegrass music!

A friend of Verlin's invited them to come see his band, The Bluegrass Patriots, & they were hooked! They traveled all across the country to attend bluegrass festivals for 15 years or so & loved it!! They made several good friends & had wonderful times!!

Sadly, Carolyn was robbed of her sweet life by a common disease, but until her end she treasured her loved ones, most of all her beloved husband Verlin of 63 years.

Carolyn is survived by her husband Verlin, daughter Stacy Rae Williams, son Kevin Pennock, daughter-in law Christie Pennock, grandchildren Elizabeth Rae, Justice Rae, Mikayla Pennock, Jacob Williams & Tyler Pennock. Great-grandchildren Chyrsthanmum Rae, Odin Rae, Freya Rae & Ezekiel Hall, & niece Connie Hein whom she shared a special bond with as well as several nieces & nephews.

Carolyn is preceded in death by her parents, sister Charlene Frank, & brother Travis Mimms.

Services will be held Saturday June 28th at 2 p.m. at Bolender's Funeral Chapel, 121 West Olive St. Ft. Collins, CO
